Because Barbera is basically the friend who shows up, cuts through the richness, compliments the mushrooms, and never overstays its welcome. It keeps the dish lively without trying to steal the spotlight.
Barbera is Piedmont’s everyday legend. The wine Piedmont locals drink when they want something delicious without having to pretend they’re “tasting” it. Sabinot’s take is all juicy cherry swagger, bright acidity, and tannins so gentle they practically apologise. It’s the perfect partner for chicken and porcini lasagna: the acidity slices through the béchamel like it’s on a mission, while the earthy undertones cozy up to the mushrooms like they’ve known each other for years. It’s unfussy, unpretentious, and unreasonably good.
